Tatsuriki's sake brewing begins in early October with the arrival of rice suitable for sake brewing, Gohyakumangoku, with rice polishing.
The first time to start squeezing sake in the year is late November.
“Freshly squeezed” sake contains an appropriate amount of carbon dioxide gas produced by alcoholic fermentation, and has a pleasant stimulation and umami along with a gorgeous aroma.
Freshly squeezed new sake filled with a tank is taken out only from the top (above the two outlets) and bottled without filtration.
It is a supreme masterpiece that is irresistible for sake lovers.

A refreshing scent that spreads as soon as you open the cap. The taste is soft, and you can enjoy the fresh sweetness and sourness of Muscat. In the second half of the taste, the umami rushes in, but the finish is light.
