Kijoshu is a luxurious sake that is brewed using Japanese sake as part of the water used for brewing.
We asked Raifuku Sake Brewery in Ibaraki Prefecture, which has a reputation for brewing kijoshu and sake using flower yeast, to brew using "azalea flower yeast".
The sake used as a raw material is not the sake of Raifuku Shuzo, but the sake that uses malic acid-rich yeast brewed by Tenryohai Shuzo, a brewery in Sado Island, Niigata Prefecture.
By using sweet and sour sake with a fruity feel like white wine, the rich sweetness is cut off by the fruity acidity, so the sweetness is not too heavy, and it goes well as a dessert sake to enjoy after a meal.
It is also recommended to enjoy it on the rocks with ice, or to eat it with ice cream.
The taste is easy to recommend for young people who are not accustomed to drinking sake and those who are new to sake.
