The "Iwanoi Aka Label" series is an unfiltered unfiltered undiluted sake made by bottling freshly squeezed "nakakumi", the most delicious sake. You can feel the "foaming feeling" brought about by the strong fermentation with super hard water unique to Iwanoi!
This is the only Yamahai preparation in the Red Label series!
Yamahai is an evolved version of kimoto, which was developed in the Meiji period. Because the yamaoroshi, which is the most laborious process in kimoto production, was abolished, the yamaoroshi was abolished, or yamahai for short. Today, Sokujomoto, in which lactic acid bacteria are directly added, is the mainstream method, a traditional method that is only used in a few breweries in Japan, including Iwanoi. By cultivating natural lactic acid bacteria as in kimoto , the amino acid composition is higher than in kimoto, resulting in a stronger, richer flavor and a richer, more aromatic flavor.
You can enjoy the dignified acidity of Yamahai, and the deep taste and moderate aroma of Yamada Nishiki. Only the rice polishing ratio is different from Yamahai Junmai Daiginjo, the highest grade product of Iwase Shuzo .
