Natural cultivation is a very difficult farming method that requires a lot of labor and time. We use Sasanishiki rice, which is made by such natural cultivation.
Since it was made in 2012, it has been carefully aged at a low temperature for about 10 years, and has a deep sweetness and sourness unique to aged sake, while maintaining a nutty aged aroma and a refreshing taste.
We recommend drinking it luke warm for a more mellow taste.
Excellent compatibility with fatty dishes such as simmered pork, eel, and simmered monkfish liver.
There is very little distribution of aged unprocessed sake. This is because an off-flavour called “seiro-ka” is generated in the process of aging unpasteurized sake, and it is difficult to control the quality of the sake.
This liquor has almost no off-flavours. It must be because carefully made things are slowly aged at a low temperature.
The sherry and caramel-like scents derived from aging are never too strong and have an elegant scent.
This is a bottle that I would definitely recommend to those who have never tried aged sake or who are thinking of giving it a try.
